This Turkish Cheese Gözleme is made with soft homemade dough, filled with cheese, and pan-cooked until crispy and golden.

  1. Prepare the Dough

    Mix the flour, salt, yeast (if using), warm water, and olive oil. Knead for 8–10 minutes until smooth. Cover and let the dough rest for 30 minutes.

  1. Prepare the Filling

    Combine the mozzarella, feta cheese, and chopped parsley in a bowl.

  1. Shape the Flatbreads

    Divide the dough into 8 equal portions. Roll each into a thin circle, place the cheese filling in the center, fold over, and seal the edges.

     

  1. Cook

    Heat a lightly greased skillet over medium heat and cook each flatbread for 3–4 minutes per side until golden brown and the cheese has melted.

  1. Brush with Butter

    Brush each hot Gözleme with melted butter immediately after cooking.

  1. Serve

    Serve warm with yogurt, fresh vegetables, olives, or Turkish tea.

Note

You can customize the filling by adding spinach, mashed potatoes, sautéed mushrooms, or seasoned ground beef. Leftovers can be refrigerated for up to 3 days and reheated in a skillet.
