    Grate the zucchini and carrot. Squeeze as much moisture as possible from the zucchini using a clean kitchen towel.

    Combine the zucchini, carrot, cheeses, eggs, breadcrumbs, green onion, garlic, salt, pepper, and Italian seasoning in a large bowl.

  1. Shape the Patties

    Mix until well combined, then shape the mixture into 10 equal oval or round patties.

    Heat olive oil in a skillet over medium heat and cook the patties for 3–4 minutes per side until golden brown.

    Transfer the cooked patties to a paper towel-lined plate to remove excess oil.

Note

If the mixture feels too wet, add a little more breadcrumbs. These patties can be refrigerated for 3 days or frozen for 2 months.
